Here’s a nice quick dish that takes advantage of the opportunity to give chicken a whole new set of flavors. Featuring some of Tina’s favorite spices, this recipe is simple to make and ends up being very versatile. We have it pictured here with a brussel sprout recipe that we will elaborate on later, but in the meantime try this as the main component to a salad or with other sides.
1 whole chicken breast split
6 garlic cloves sliced thinly
1/2 teaspoon smoked sea salt (Whole Foods Market, bulk)
1/2 teaspoon thyme
1/8 teaspoon lemon grass (purchased from Penzey’s Spices)
1/2 teaspoon greek seasoning (purchased from Penzey’s Spices)
Pepper to taste
2 tablespoons olive oil
Place sliced garlic on one side of the chicken breast. Season with smoked sea salt, thyme, lemon grass, pepper and greek seasoning. Take the other side of the chicken breast and place on top of the chicken breast that has garlic and seasonings. Place in a glass baking pan and bake at 350 degrees for about 30 minutes. You will know it’s cooked through when you slice the end and there is no longer any pink color.
