As the weather gets colder, I begin to think of the tasty delicacies that we all associate with the holidays: hot chocolate, gingerbread, turkey, stuffing, cookies… These are foods that don’t exactly lend themselves to sustainable wellness. Of course options exist in excess for alternative- and equally satisfying- healthy winter treats, but they’re so hard to find!
After spending some time researching recipes yesterday, combining and omitting and modifying, I wound up with this absolutely amazing vegetarian pot pie! Featuring green beans, almond flour and a myriad of holiday spices, the flavor is nothing short of satisfying during the holiday season.
